Yes, I admit I was born and raised in Pueblo, Colorado. I lived there for 18 years. I believe no matter where your roots were first planted you should always be proud. I'm proud to be a Pueblo girl. We went down to Pueblo to help my Father around the house. Before we begin our chores we went out to the country and the kids picked out pumpkins. The highlight for Nathan and I was our bushel of roasted chili peppers. We love, love roasted chili's. We were excited because it has been a while since we had them stocked in our freezer. Our car still smells like yummy peppers. Nathan and I spent 2 hours peeling the skins off the peppers, we realized after the fact that we should have got a half bushel NOT a full.(Check out the bottom picture.)

The aftermath! It's hard to tell, but there is a ton of skins in the sink. If you want a taste of my childhood come on over. I'm sure we can spare some yummy roasted green chili's. We eat them in scrambled eggs, grilled cheese sandwiches, main dishes, and I think I'm going to attempt to make homemade green chili.

I love stocking up on something so yummy! HOpe it lasts a long time.
I put them in my homemade refried beans - yummo! I bet it smelled divine and I bet your hands were positively green!
I never thought of putting them in grilled cheese sandwiches, BUT I bet that WOULD be good!
So educational, Trinette. I don't think I've EVER had a roasted chili pepper that wasn't in a bottle.
What a fun day! That's a lot of chili skins...but I am sure it will be gobbled up quickly!
