Requested Recipes

I've had a request for a couple of my recipes. Hope you enjoy.

Homemade Pear Sauce

9 pounds Bartlett pears, peeled, cored and sliced
1 cup water
2 T. lemon juice
1 to 1 1/2 cup sugar
1 to 2 tsp. cinnamon
Combine pears and water in a heavy 8 to 10 quart pan. Bring to a boil over medium-high heat, stirring often. Reduce heat, cover, and simmer, stirring often, until pears are soft about 20 to 30 minutes.
Add lemon juice, and sugar and cinnamon, bring to a boil. Simmer sauce uncovered until thick as desired. If you like your sauce smoother put in blender (I use the blender). You can freeze, can, or just eat it all up. We think pear sauce is better than apple sauce. Makes about 6 pints.

Pumpkin Bread

1 1/3 cup vegetable oil (Yikes, I know)
5 eggs
1 16oz can pumpkin
2 c. flour
2 c. sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
2 3oz. pkg vanilla pudding
Preheat oven to 350. Mix oil, eggs and pumpkin and beat well. Combine dry mixture except pudding. Add to pumpkin mixture, mix until blended. Stir in pudding mix. Pour into loaf pans. Bake for 1 hour. Makes 2 loaf pans.

Oh awesome. Thanks, T! Have you ever added chocolate chips to that pumpkin bread? Like it needs more to make it less healthy! But I love adding chocolate to anything!

I'll have to try your pumpkin bread recipe, hon. During my entire life I have not found one I liked. When you see me next time, ask me about the pear story!!!

I used the pear sauce recipe, but didn't have a heavy pot, so I used my crock pot. We Just let it cook until soft, stirring now and then. It was so easy!
