I love making green food on St. Patrick's Day. My family expects with great anticipation(okay, maybe that was over the top) green food and fun. We had dinner at a friends house last night and I brought mint brownies. Our family loves these brownies, I repeat we love these brownies. I have been making them for years. I believe I got this recipe from my sister-in-law Roselle. Becki, here is your requested recipe. Nathan actually didn't want me to share it. He said it was our special recipe. I thought that was funny, Nathan usually doesn't care about that sort of thing. I know I don't mind sharing good recipes. Enjoy!
I know, I'm not that great at food photography or any photography for that matter. I do my best and that is good enough for me.Mint Brownies
3 Cubes Butter (Yikes - I know, but it makes a big pan)
3 1/4 Cups sugar
7 eggs
1 tsp. vanilla
1 tsp. salt
1/2 cup cocoa
2 1/2 cups flour
Mix ingredients together and spread in a 13x17 cookie sheet. Bake at 350 for 20-30 minutes.
Frosting
6 oz. cream cheese
6 cups powdered sugar
milk
1 tsp mint extract
green food coloring
Mix together for desired consistency. Spread on cooled brownies and drizzle with chocolate.
I'm sure you can half this recipe, but I can never bring myself to do it.

SO glad you posted your recipe. Last week I had to make a cake for RS dinner. I made chocolate with cream filling (yum!). The whole time I was making it I thought of your mint brouwnies - I would have preferred them right then! Then today I thought, I'll see what Trinette and family are up to...and I find the good recipe! It's made this a good day!
