Karen's Lemon Bread

Can I just say I love this lemon bread! The bread always brings back memories of a wonderful friend leaving a brown sack full of yummy goodness on my doorstep. The yummy moist bread also smells and taste like summer to me. I'm hoping if I bake some lemon bread today it will bring a ray of sunshine. Enjoy this special recipe from my friend Karen Goates.

Karen's Lemon Bread
2 1/4 cups all-purpose flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 sticks unsalted butter at room temperature
2 1/4 cup sugar
4 large eggs
2 tsp. packed grated lemon zest
2 tsp. pure lemon extract
1 16 ounce container sour cream

Lemony Glaze
3/4 cup powdered sugar
1 to 2 tsp. fresh lemon juice

Preheat oven to 350 degrees. Butter and flour 6 small loaf pans.
1. Whisk together the flour, baking soda, and salt in medium bowl.
2. In a large bowl, beat together the butter and sugar with an electric mixer on medium speed until light and fluffy, 2 to 3 minutes. Add eggs one at a time. Beat in the lemon zest and the lemon extract. On low speed, beat in flour and sour cream alternated in three additions, beat until incorporated.
3. Pour into prepared pans Bake for 32-34 minutes or until toothpick comes out with a few moist crumbs on it. Cool completely.
4.Whisk ingredients together for glaze. Pour glaze over bread.

I literally just checked my pantry to see if I could make this right now! (I just got back from grocery shopping) I am missing a few ingredients, but it sounds yummy enough that MAYBE I will make another trip to the store. We will see. I am a big sucker for warm, lemony, moist, goodness.
