I don't know about you, but I'm ready to start eating yummy salads again. I got out of the habit during the holidays. To be honest, I despise making salads. I love eating them, but they are just plain annoying to make. If I was rich I would hire a private chef to come and make my delicious, nutritious salads. That is in my dream world, so back to reality. I decided to share a few of my favorite salads, just in case some of you are feeling like turning over a new leaf (bahaha, no pun intended).
Asian Cabbage Salad: Our Best Bites
Becki's Spinach Salad
Okay ladies it doesn't get any harder than this. Grab a plate. Throw some baby spinach leaves on your plate (careful don't start a food fight). Then add what your little heart desires. This is what I like, apples, grapes, carrots, tomatoes, cheese, and shredded chicken. You can add what ever you like for the dressing, my friend Becki likes fresh lemon juice and olive oil. I like fat free Italian dressing.
Strawberry Spinach Salad
2 bunches spinach leaves
4 cups sliced strawberries
1/4 cup canola oil
1/4 cup white wine vinegar
1/2 cup sugar
1/4 tsp. paprika
2 tbs. sesame
1 tbs. poppy seeds
Mix first 2 ingredients together. Combine the rest in a jar and shake to combine. Pour dressing over salad when ready to serve.
Mandarin Salad
Nuts
1/2 cup sliced almonds
2 tbs. plus 2 tsp. sugar
Cook almonds and sugar over low heat, stirring constantly until sugar is melted and almonds are coated. Cook and break apart. Store at room temperature.
Sweet and Sour Dressing
1/4 cup canola oil
2 tbs. sugar
2 tbs. vinegar
1 tsp. dry parsley
1/2 tsp. salt
dash pepper
dash red pepper sauce
Sake all ingredients in jar and refrigerate.
Salad
1/2 head of lettuce torn
1/2 bunch romaine torn
4 medium stalks celery sliced thin
4 green onions sliced thin
2 cans (11oz.) mandarin oranges, drained
Mix all ingredients in a large bowl. Add nuts. Just before serving add dressing.
Oriental Salad
Dressing
1/2 sup sugar
1/2 cup canola oil
1/4 cup cider vinegar
2 tsp. soy sauce
salt and pepper
Salad
1 pkg. roman noodles
2 tbs. butter
11/2 cup chopped broccoli
roman lettuce
4 green onion chopped
1/2 cup walnuts
Saute noddles in butter, combine all soft ingredients. Add noodles and walnuts. Add dressing when ready to serve.
Yes, I love the Asian type salads as you can tell by the recipes. Enjoy!
